COURSE
OVERVIEW
You will be working in our industry standard kitchens at our Huddersfield Centre to develop your craft over two years. On the course you will complete mandatory modules that will teach you how to produce dough and batter, petits fours, paste products, hot, cold and frozen desserts, biscuits, cakes and sponges, as well as display pieces and decorative items.
Throughout your modules you will also cover the principles of food safety and hygiene, and learn how to work effectively in a professional kitchen. At Kirklees College we operate a student-led restaurant, Landings 72, which is open to the public. You will help prepare desserts, pastries and cakes for the restaurant, café and deli which will equip you with work skills to prepare you to work in a real kitchen environment.
Professional standards are expected at all times in our kitchens and as part of this we ask all students to purchase uniform and kitchen equipment before they start their course. You will be sent more information about how to order your kit before you start your course and financial support is available to help you with the costs if you qualify.
At the end of the course you will have extensively practiced a range of recipes which will prepare you to take the next steps in your career as a pattisiere.

Entry Requirements
Level 2 Patisserie qualification or relevant industry experience.
If you have an EHCP then please be aware that the college needs to have agreed, via the consultation period with your local authority, that we can meet the needs outlined in your EHCP before you can start on a course with us.
Assessment Methods
You will be assessed through written assessment, practical tasks and synoptic assessment.

This course will qualify you to work as a pattisiere but possible other career paths include baker, chef, restaurant/café manager and other Catering roles.
